Have you ever heard of frozen lemonade pie? I hadn't until recently. Ever since I had my first bite I have been semi-obsessed with the stuff. It's really simple and healthy not too bad for you if you only have it occasionally. ;)

I had it first at a Girl's Game Night. I would have begged for the recipe but thankfully she gave it up with little  begging. So, here it is!

8 oz partially thawed frozen lemonade
1 pint vanilla ice cream
8 oz cool whip
Graham cracker crust
Mix the frozen lemonade and the pint of ice cream together in a bowl. Fold in the cool whip. Pour it into the crust and freeze.

That is it! How much easier can you get? It is refreshing and surprisingly light. Since getting this recipe I have seen it everywhere but it is usually made with condensed milk. I like the vanilla ice cream as it adds something special.

I tend to love Alton Brown's recipes. So, when I was wanting brownies I was more than willing to try his recipe for them. They are very moist and chocolaty. Chocolatey? Full of chocolate. Yeah that.
Try them and tell me what you think! And, just as a note, I don't own a mixer of any kind so I did this by hand. Worth it for sure.

Ingredients

Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
1 and 1/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Directions

Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.

In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.

Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.


Try not to eat the whole freaking pan! This is difficult for me. I couldn't believe how little flour is in this recipe but it makes for a brownie that is very rich. I think they would be delicious if you add some cinnamon in as well. Mmm.

"You should enjoy every moment now! They grow up so fast!"


I want to throttle the people who tell me this. Okay not really. But yes, it is true that kids grow up faster than Ben & Jerry's disappears from my freezer. That is not the issue. My issue with this statement is this. There is no way I can enjoy every moment. 

You know that moment when your child throws herself to the floor because she wants a lollypop for the second (or third - don't judge!) time in a row. That moment is not one I can enjoy.

Then, there is whining and crying about every little thing. Sometimes over things I never even understand.

Saying that I should enjoy every moment makes me feel like a complete and utter failure of a Mom. And lets face it, no Mom needs help in that area.

I know at this point I am sounding like an ungrateful person. Children are blessings and I thank God every day for this child. I would not trade her for anything. I wish that all people who desire children could have them. You know, we struggled with infertility for 11 years before having her (and still do for that matter).

But, let's be real here because what else have we got? The fact that kids grow up fast does not negate the fact that parenting can be hard. So hard. There is no manual and each child is different. 

Each moment is not a bouquet of roses. And that is okay. Do you hear me? It's okay to not be in love with every single second because the next ones might be absolutely breathtaking.

Relax and take it one moment at a time.

It was nice to have a three day weekend even though Memorial Day is not the most happy of days. After all, death is always a hard thing to celebrate. Still, I am thankful for each and every life that has been lost to give us the freedoms we have.

We spent this weekend with friends. Saturday morning we went out to the lake. My hubby loves to fish and I like to take photos.





Saturday afternoon we had a cookout at a friend's house where we played ladder ball and bocce ball. I had never played either and though I completely suck at the first one, I consider myself pretty good at the second. It was fun regardless. We had a campfire later and had Smores. Mmm.






Sunday was a day of church and hanging out at home. Nice and relaxing. I love naps in the cool breeze from an open window. I usually never nap.

Monday we went to the park and met some people there. We grilled and just played around. My hubs even played football for a while despite having foot issues that usually prevents him from doing so.
